Prawn Risotto : Recipe of the week

Since Harvey has started school and having school dinners he has become A LOT less fussy. It has made meal times so much easier and our menu planning is becoming vastly easier.

My main key in finding new recipes is ease. I can't stand a faffy, fiddley recipes that need 20 different spices and herbs that you just do not have in the cupboards. I'm all about less ingredients with maximum flavour.

Bring on the risotto!!

I have never done one before, purely because i'm not a huge fan of rice. But, the boys love it and Elsie loves a curry so i figured why not.

Prawn and Pea Risotto.


Serves 4. Or 2 good portions for adults and 2 (and a half!) children.

400g peeled prawns
300g risotto rice
few handfuls of peas
1 medium onion
9floz of milk
1pt fish stock or water
Knob of butter

Method :

Finely chop the onions and fry in the butter until soft. Add the stock, milk and rice and give it a good stir. Bring to the boil and turn the heat right down with the lid on the saucepan.
Put the prawns and peas in for the last 5 minutes
Cook for 18 minutes in total
Season with salt and pepper if desired


Job done!!

It tasted real yummy and the kids loved it!! As you can see...
